Snow, again!? No matter, Derrick has put together an ultimate comfort soup: Cajun Red Bean & Rice. He’s been developing this recipe for a year or so and its been a popular one, but this is his first attempt at making it vegetarian (it’s usually slow-simmered with roasted chicken!). Lots of vegetables, spices and a dark roux are cooking to perfection and will be ready to go by lunchtime!
